Pastels, also known as "Fataya" or "Pâtés" depending on the region, are pastry pockets made from wheat flour dough, filled with a generous and flavorful stuffing. The traditional filling consists of shredded tuna, tomatoes, onions, and an array of spices, but the variations are endless. One can find minced beef, chicken, vegetables, or even a vegetarian version with potatoes and peas. Each bite of Pastel is a true explosion of flavors, where the sweetness of the pastry perfectly complements the spicy and aromatic notes of the filling. To prepare pastels, the dough is lovingly kneaded, then divided into small balls that are flattened and carefully filled. The pockets are then shaped into a half-moon, their edges delicately sealed to trap the flavors. Finally, they are fried in hot oil until golden and crispy, ready to be enjoyed with gusto. In Senegal, pastels are more than just a snack; they are also enjoyed for breakfast, accompanied by a glass of kinkeliba or café Touba, for example.
