The African ginger juice, known by various names such as Gnamakoudji, Gnamankoudji, Nyamakuji, or Gnamacoudji, is a popular traditional beverage consumed in several West African countries such as Senegal, Nigeria, Benin, Ivory Coast, and Guinea. This juice is prepared from ginger rhizomes, a root beneficial for health and appreciated for its properties. Traditionally, ginger juice is mixed with lemon and can be enhanced with other ingredients such as lime, mint leaves, vanilla sugar, pineapple juice, or Guinea sorrel (bissap). It is traditionally enjoyed chilled. It is also prepared in other regions of Africa under names like tangawisi in Central Africa or tangawizi in East Africa, and emuduro or emudro in Ghana. The preparation of ginger juice typically involves peeling and cutting the ginger, infusing it in boiling water with lemon, straining the mixture, adding sugar and additional ingredients according to preferences, then refrigerating it before serving chilled.
