The mintoumba is a traditional cake of the Bassa people, originating from Cameroon. It is made from fermented fresh cassava and red palm oil. The cassava dough is mashed and mixed with red palm oil, salt, and some seasonings according to taste. The dough is then wrapped in Maranthacées leaves and steamed.
The mintoumba is often served as an accompaniment to a sauce or enjoyed as a snack. It has a distinct taste and its yellow color resembles that of gold. Highly appreciated, it is a pride of Cameroonian cuisine.
In the various Bassa villages, the mintoumba, which is considered a local bread, is consumed for breakfast as well as for dinner. It accompanies various sauces, is eaten alone, or with snacks such as peanuts. Its commercialization is widespread along all the road and railway routes that cross the Bassa country. Its trade is successful in major cities in Cameroon such as Douala or Yaoundé.
